HEALTHY VEGAN SWEET POTATO & RED KIDNEY BEANS PATTIES – LADIES WHO ONLINE
Loaded with protein and fiber are these Vegan Sweet Potato and Red Kidney Beans Patties that are delicious and nutritious. It’s a healthier option to fried burger patties that one usually eats. These high protein patties are also a must-try given its crunchy exterior and soft interior. You can make it as a snack option or as a burger option for your little ones. They will surely love this. It’s a great and healthy way to incorporate in your diet, too.
INGREDIENTS:
1 cup – cooked Red Kidney beans soaked and pressure cooked / canned organic red kid’s eyes beans
1 cup – sweet potato, cooked and smashed
1 1/2 – onion, chopped
1 – green chili minced
1 – clove garlic minced
1/2 tsp. – turmeric powder
1/2 tsp. – paprika powder/ red chili powder
1 tsp. – cumin powder
1 tsp. – amchur powder (mango powder)
1 tsp. – chaat masala / sandwich masala / garam masala
Himalayan salt to taste
1/2 cup – semolina or can use 2-3 tsp. quinoa flour / oat flour
Some chopped coriander
Coconut oil as required and for binding
Grated vegan cheese (optional)
METHOD:
Step 1: In a large bowl, add the mashed sweet potatoes and red kidney beans.
Step 2: Add the onions, garlic, green chilies, Turmeric powder, paprika or red chili powder, cumin powder, amchur powder, chaat masala/sandwich/Garam masala powder, and Himalayan pink salt (to taste). Then add the chopped coriander, grated vegan cheese, and a little lemon juice. Squeeze and mix it until it combines all ingredients.
Step 3: For binding, grease some coconut oil on your hands. Take a portion of the prepared mixture and shape into round patties.
Step 4: Coat the patties with some semolina/oat flour on a plate. But if you are gluten-intolerant, you can use quinoa flour and set aside.
Step 5: Heat 1 tbsp. coconut oil/olive oil spray in a non-stick pan, then put the patties on the pan until golden and crisp.
Step 6: Serve with some mint green chutney and onion slices. The kids will love this as a burger patty option too.
